Pepperoncini Beef Italian Dressing and Au Jus

These easy crock pot Italian Beef Sandwiches are an all time favorite and perfect for potlucks, gameday and movie night.  Or whenever you want a delicious mouthwatering sandwich loaded with fall apart tender beef, melted Italian cheese and dripping with au jus.

These are a family favorite and always a hit with friends and family. I love to serve these with Baked Macaroni and Cheese, Parmesan Pasta, and Twice Baked Potatoes.

How to make Italian Beef Sandwiches

Start by adding the chuck roast, french onion soup, dry italian dressing packet, pepperoncinis and Italian seasoning to the crockpot.  Cook on high for 5-6 hours or low for about 8-9 hours.  Now shred the beef removing any fat, gristle and cartilage. Then toast the buns in a toaster or under the broiler.  Now add cheeses to both sides of the bun and place back under the broiler on low until melted.  Next top with shredded beef, pepperoncinis and onions.  If desired serve with small bowls of au jus on the side for dipping.

Recipe notes and helpful tips

  • You can use whole pepperoncinis or sliced pepperoncinis.  I like the sliced ones because you can add them to the sandwiches after being cooked
  • This recipes works best with chuck roast.  Chuck roast has fat and cartilage and that is what makes it so tender after it is slow simmered.
  • Buns, hoagies, french bread and even toasted white bread make great sandwiches with this recipe.
  • Any cheese that melts well works on this sandwich including but not limited to Swiss, mozzarella, provolone, provel, Pepper Jack and Monterey Jack.
  • Store leftover beef in an airtight container in the fridge for up to 4 days.  For best results toast buns and melt cheese right before serving.

How to make Italian Beef in an instant pot

Cut your chuck roast into 3-4 pieces.  Then simply add your ingredients to the instant pot as directed in the instructions (same as crock pot).  Next lock your lid in place and cook on high for about 50-60 minutes or until fork tender and shreddable.

Crock Pot Italian Beef Sandwiches

This mouthwatering melt in your mouth Italian Beef cooks up easy in the crock pot and is always a huge hit.  Make it up into hot beef and melted cheese sandwiches or served over mashed potatoes for the ultimate comfort meal.

  • 3 lb chuck roast
  • 2 (10.5 ounce) cans french onion soup (see notes)
  • 1 (.7 ounce) packet dry Italian dressing
  • 1 (16 ounce) jar sliced pepperoncinis with juice
  • 1 teaspoon Italian seasoning blend
  • 10 hoagie buns
  • 2 1/2 cups shredded provolone, mozzarella, Monterey Jack, or Pepper Jack cheese (see notes)
  1. Add the chuck roast, french onion soup, dry italian dressing packet, pepperoncinis (including juice) and Italian seasoning to the crockpot.
  2. Cook on high for 5-6 hours or low for 8-9 hours.  Shred the beef discarding any fat, gristle and cartilage.
  3. Toast the buns in a toaster or under the broiler.  Add the cheeses to both sides of the bun and place  under the broiler on low until melted.
  4. Top with shredded beef and cooked pepperoncinis  If desired serve with small bowls of au jus on the side for dipping.

Notes

  • I like to use Campbell's french onion soup but you can or substitute with 2 cups beef broth.
  • Use about 1/4 -1/3 cup shredded cheese per sandwich.
